1 cup sugar

1/2 cup butter, softened

1 egg

Zest of 3 key limes (or 1 regular lime)

1 3/4 cups flour

1/2 tsp baking soda

1/4 tsp salt

1 cup sweetened shredded coconut, toasted

4 oz cream cheese, softened

1/3 cup sweetened condensed milk

2 tbsp key lime juice
Instructions

Preheat oven to 350°F (175°C).

Beat butter and sugar until light and fluffy. Add egg and lime zest.

Stir in flour, baking soda, and salt.

Roll dough into balls, then roll each in toasted coconut. Place on a baking sheet.

Press a thumbprint into each cookie.

Bake for 6 minutes.

Meanwhile, mix cream cheese, condensed milk, and lime juice.

Remove cookies, spoon filling into the center, and bake 4-5 more minutes.

Cool completely. Chill before serving for extra pie-like texture.
