Toasted Coconut Key Lime Pie Cookies

Ingredients

  • 1 cup sugar

  • 1/2 cup butter, softened

  • 1 egg

  • Zest of 3 key limes (or 1 regular lime)

  • 1 3/4 cups flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 cup sweetened shredded coconut, toasted

  • 4 oz cream cheese, softened

  • 1/3 cup sweetened condensed milk

  • 2 tbsp key lime juice


Instructions

  • Preheat oven to 350°F (175°C).

  • Beat butter and sugar until light and fluffy. Add egg and lime zest.

  • Stir in flour, baking soda, and salt.

  • Roll dough into balls, then roll each in toasted coconut. Place on a baking sheet.

  • Press a thumbprint into each cookie.

  • Bake for 6 minutes.

  • Meanwhile, mix cream cheese, condensed milk, and lime juice.

  • Remove cookies, spoon filling into the center, and bake 4-5 more minutes.

  • Cool completely. Chill before serving for extra pie-like texture.
