Description

Ingredients

  • 3 medium tomatoes
  • 1 small red onion
  • 1 tbsp dried mint
  • 23 tbsp fresh lime juice
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Prep your ingredients: Begin by washing your cucumbers and tomatoes thoroughly. Dry them gently and then set them aside.
  2. Chop the cucumbers: Slice your cucumbers in half lengthwise, and then chop them into bite-sized pieces.
  3. Dice the tomatoes: Next, chop the tomatoes into similar-sized pieces as the cucumbers.
  4. Slice the onion: Take your red onion and slice it thinly. Soak in ice-cold water if necessary.
  5. Mix it up: In a big mixing bowl, combine the cucumber, tomatoes, and onions. Give everything a gentle toss.
  6. Add the mint: Sprinkle in your dried mint, and toss gently to combine.
  7. Dress it up: Drizzle the fresh lime juice over your salad and season with salt and black pepper.
  8. Chill: Let the salad sit in the fridge for about 30 minutes to enhance flavors.
