- 2 medium cucumbers
- 3 medium tomatoes
- 1 small red onion
- 1 tbsp dried mint
- 2–3 tbsp fresh lime juice
- Salt (to taste)
- Black pepper (to taste)
Instructions
- Prep your ingredients: Begin by washing your cucumbers and tomatoes thoroughly. Dry them gently and then set them aside.
- Chop the cucumbers: Slice your cucumbers in half lengthwise, and then chop them into bite-sized pieces.
- Dice the tomatoes: Next, chop the tomatoes into similar-sized pieces as the cucumbers.
- Slice the onion: Take your red onion and slice it thinly. Soak in ice-cold water if necessary.
- Mix it up: In a big mixing bowl, combine the cucumber, tomatoes, and onions. Give everything a gentle toss.
- Add the mint: Sprinkle in your dried mint, and toss gently to combine.
- Dress it up: Drizzle the fresh lime juice over your salad and season with salt and black pepper.
- Chill: Let the salad sit in the fridge for about 30 minutes to enhance flavors.
- Serve and enjoy: Scoop the salad into a serving bowl or onto individual plates.
