Ingredients

For the Peanut Chicken:
• 2 lbs cooked chicken breast or thighs, sliced or shredded
• ½ cup creamy peanut butter
• 3 Tbsp soy sauce (or tamari for gluten-free)
• 2 Tbsp honey or maple syrup
• 1½ Tbsp fresh lime juice
• 1 tsp grated fresh ginger
• 1 clove garlic, minced
• Warm water to thin, if needed

For the Bowls:
• 4 cups cooked jasmine rice
• 1 cup shredded carrots
• 1 cup cucumber ribbons or slices
• ½ cup crushed peanuts
• Optional toppings: chili oil, fresh cilantro, lime wedges


Instructions

In a medium bowl, whisk together peanut butter, soy sauce, honey, lime juice, ginger, and garlic until smooth. Add warm water a tablespoon at a time to reach desired consistency.

Toss cooked chicken in the sauce until well coated.

To build the bowls: start with a base of jasmine rice, then layer on peanut chicken, carrots, and cucumbers.

Top with crushed peanuts, a drizzle of chili oil if you like heat, and a sprinkle of cilantro.

Serve immediately with extra lime wedges on the side.
