- 4 chicken thighs, boneless and skinless
- 1/4 cup soy sauce
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon lime juice
- 2 cloves garlic, minced
- 1 teaspoon ginger, grated
- 1/2 teaspoon black pepper
- 1 tablespoon chili paste (optional)
- Fresh cilantro for garnish
Instructions
- Prepare the Marinade: In a bowl, whisk together the soy sauce, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, black pepper, and chili paste (if you’re using it).
- Marinate the Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well-coated. Seal the bag or cover the dish and let it marinate in the fridge for at least 30 minutes.
- Preheat Your Grill: Aim for medium heat (around 350°F).
- Grill the Chicken: Remove the chicken from the marinade, letting excess drip off. Place the chicken thighs on the grill, skin-side down. Close the lid and cook for about 6-7 minutes.
- Flip and Finish Cooking: After 6-7 minutes, flip the chicken and grill for another 6-7 minutes until cooked through (internal temperature should be 165°F).
- Rest the Chicken: Remove the chicken from the grill and let it rest for about 5 minutes.
- Serve: Plate the chicken, sprinkle with fresh cilantro, and serve with lime wedges on the side.
Notes
For serving, pair with jasmine or coconut rice, or serve on a bed of mixed greens with a sesame dressing.
