Ingredients
1 (30–32 oz) bag frozen tater tots
16 oz diced ham (or cooked bacon/sausage, or beans/veggies for a meatless twist)
1½ cups shredded cheddar cheese
1 cup shredded mozzarella or Monterey Jack
8 large eggs
½ cup milk
1 cup sour cream
½ tsp salt
½ tsp pepper
½ tsp garlic powder
½ tsp onion powder
1–2 tsp hot sauce (optional)
Instructions
Preheat oven to 375°F and spray a 9×13 baking dish with non-stick spray.
Add tater tots, ham, 1 cup cheddar, and 1 cup mozzarella to dish. Mix gently.
In a bowl, whisk eggs, milk, sour cream, and seasonings (plus hot sauce if using).
Pour over the tater tot mix.
Bake for 45 minutes until golden and set.
Sprinkle remaining ½ cup cheddar on top. Bake 5 more minutes until melted.
