Ingredients
1 cup cornmeal
1 cup all-purpose flour
⅓ cup sugar
1 tbsp baking powder
½ tsp salt
1 cup milk
2 large eggs
½ cup unsalted butter, melted
Optional: 1 tbsp honey for extra sweetness
Instructions
Preheat Oven: Set oven to 375°F (190°C) and grease a muffin tin or line with paper cups.
Mix Dry Ingredients: In a bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
Add Wet Ingredients: In another bowl, mix milk, eggs, and melted butter (and honey, if using).
Combine: Stir wet ingredients into dry just until combined. Don’t overmix.
Bake: Spoon into muffin cups and bake for 15–18 minutes, or until tops are golden and a toothpick comes out clean.
Cool Slightly & Serve: Best served warm with butter, jam, or alongside chili.
