Ingredients
1½ lbs chicken tenders
1 tbsp oil (vegetable or sesame)
½ cup Thai sweet chili sauce
Juice and zest of 1 lime
2 garlic cloves, minced
1 tbsp chopped fresh cilantro (plus more for garnish)
Optional: 1 tsp soy sauce for umami kick
Optional sides: coconut rice, lime wedges
Instructions
Sear Chicken: Heat oil in a skillet over medium-high heat. Season chicken with salt and pepper. Cook tenders for 3–4 minutes per side until golden and cooked through.
Make Sauce: In a small bowl, mix sweet chili sauce, lime juice/zest, garlic, and soy sauce (if using).
Glaze: Pour sauce into skillet with the chicken. Simmer 2–3 minutes, tossing until chicken is coated in sticky glaze.
