Description

Delicious stuffed peppers filled with lean ground turkey, quinoa, and a medley of spices for a comforting meal.


Ingredients

  • 4 large bell peppers (any color)
  • 1 pound lean ground turkey
  • 1 cup cooked quinoa
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 cup corn (canned or frozen)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the bell peppers by cutting the tops off and removing the seeds.
  3. Cook the diced onion and minced garlic in olive oil until fragrant.
  4. Brown the ground turkey in the skillet, seasoning with salt, pepper, cumin, and paprika.
  5. Stir in the cooked quinoa, diced tomatoes, and corn.
  6. Stuff the mixture into each bell pepper until heaping.
  7. Bake for 25 minutes covered with foil, then uncover and bake for an additional 10-15 minutes.

Notes

Feel free to add extra spices or vegetables to the filling. Garnish with parsley before serving.
