Description

Ingredients

  • 1 lb grilled chicken, diced
  • 1 cup sweet corn, cooked
  • 1/2 cup diced bell pepper

  • 1 avocado, sliced
  • Lime wedges

Instructions

  1. Cook the rice according to package instructions.
  2. Grill the chicken until fully cooked, about 5-7 minutes per side, and then chop into pieces.
  3. Sauté the corn and bell pepper in olive oil for about 5-7 minutes until tender.
  4. Combine the rice, diced chicken, sautéed corn, and peppers in a bowl.
  5. Add the chopped cilantro and mix well.
  6. Plate the mixture into bowls, layering with avocado slices and lime wedges.
