Delicious cookies that combine the rich, creamy goodness of cheesecake with the sweetness of strawberries.


Ingredients

  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for cheesecake filling)
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Add the egg and 1 teaspoon of vanilla extract, and mix until well combined.
  4. Mix together the flour, baking soda, and salt in a separate bowl, then gradually incorporate it into the wet mixture.
  5. Fold in the diced strawberries gently.
  6. Beat the softened cream cheese with the powdered sugar and 1/2 teaspoon of vanilla extract until smooth.
  7. Assemble the cookies by taking a tablespoon of dough, adding a dollop of the cream cheese filling, and encasing it with the dough.
  8. Bake for 12-15 minutes until edges are lightly golden.
  9. Cool on a wire rack before enjoying.
