- 1 cup sugar
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, diced
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract (for cheesecake filling)
- 1 egg
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and sugar until light and fluffy.
- Add the egg and 1 teaspoon of vanilla extract, and mix until well combined.
- Mix together the flour, baking soda, and salt in a separate bowl, then gradually incorporate it into the wet mixture.
- Fold in the diced strawberries gently.
- Beat the softened cream cheese with the powdered sugar and 1/2 teaspoon of vanilla extract until smooth.
- Assemble the cookies by taking a tablespoon of dough, adding a dollop of the cream cheese filling, and encasing it with the dough.
- Bake for 12-15 minutes until edges are lightly golden.
- Cool on a wire rack before enjoying.
Notes
Try serving with fresh strawberry slices or a dusting of powdered sugar for an extra touch.
