- 8 oz noodles (lo mein or spaghetti)
- 1 lb chicken breast, sliced
- 4 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup mixed vegetables (bell peppers, snap peas)
- 2 green onions, sliced
- Sesame seeds for garnish
Instructions
- Cook the noodles: Boil a large pot of water, add noodles, and cook according to package instructions. Drain and set aside, drizzling with sesame oil to prevent sticking.
- Prep the chicken: Heat 1 tablespoon of sesame oil in a skillet over medium-high heat. Add sliced chicken and cook for 5–7 minutes until no longer pink. Don’t overcrowd the pan.
- Sauté the garlic and veggies: Add minced garlic to the skillet and sauté for 30 seconds. Then, toss in mixed vegetables and cook for another 3–4 minutes until tender-crisp.
- Make the sauce: Whisk together soy sauce, honey, rice vinegar, and red pepper flakes. Pour over chicken and veggies, stir, and let simmer for a couple of minutes until thickened.
- Combine with noodles: Add the drained noodles to the skillet, tossing everything together until noodles are well-coated with the sauce.
- Garnish and serve: Remove from heat, serve in bowls topped with sliced green onions and sesame seeds. Optionally, squeeze lime juice over the dish before serving.
Notes
Feel free to adjust the heat with more or less red pepper flakes and use any vegetables you have on hand.
