- 1¼ lb flank steak (or your preferred cut)
- 1 large sweet potato (about 1 lb), peeled and cut into 1-inch cubes
- 1½ Tbsp extra-virgin olive oil
- Garlic salt and black pepper
- 2 cups baby arugula or baby spinach
- Cooked white rice, for serving
- ½ large avocado, thinly sliced
- ¼ cup reduced-sodium tamari (or soy sauce)
- 2 Tbsp vegetable oil
- 2 tsp honey
- 4 garlic cloves, lightly smashed
- ½ tsp red pepper flakes (adjust to taste)
- ¼ tsp ground ginger
- ½ large avocado (for the drizzle)
- ¼ cup fresh cilantro, packed
- 1½ Tbsp fresh lime juice
- 1 garlic clove
- Salt and black pepper, to taste
- 2–4 Tbsp water
Instructions
- Combine marinade ingredients: In a bowl, whisk together tamari, vegetable oil, honey, smashed garlic cloves, red pepper flakes, and ground ginger until well mixed.
- Marinate: Place the flank steak in a plastic bag or shallow dish and pour the marinade over it. Let it marinate for at least 30 minutes.
- Prep the sweet potatoes: Preheat your oven to 425°F (220°C). Place the sweet potato cubes on a baking sheet, drizzle with olive oil, and season with garlic salt and black pepper. Toss to coat.
- Roast: Spread out the sweet potatoes in a single layer and roast for about 25-30 minutes, flipping halfway through.
- Cook the steak: Heat a skillet over high heat. Remove the steak from the marinade and sear it for about 4-5 minutes on each side for medium-rare.
- Make the drizzle: While the steak is resting, blend avocado, cilantro, lime juice, garlic, salt, and pepper until smooth. Adjust consistency with water as needed.
- Assemble: In a bowl, start with white rice as the base. Top with roasted sweet potatoes, sliced steak, arugula, avocado slices, and drizzle with the avocado-cilantro sauce.
- Serve: Enjoy the vibrant colors and flavors with friends or family!
