1 roll refrigerated sugar cookie dough
Star-shaped cookie cutter
Red and blue sprinkles
1 quart vanilla ice cream, softened
Optional: red and blue food coloring for ice cream swirl
Instructions
Preheat oven and roll out cookie dough. Use star-shaped cutter to cut stars and stripe-shaped rectangles.
Bake according to package directions and let cool completely.
Mix red and blue sprinkles (or coloring) into softened vanilla ice cream.
Scoop ice cream onto one cookie, then gently press another cookie on top to form a sandwich.
Wrap individually and freeze until firm, about 2–3 hours.
