Spicy Honey-Ginger Chicken Bowls with Yum Yum Sauce

Ingredients

For the Chicken:

lbs chicken (breasts or thighs)

1 tbsp + ⅓ cup tamari or soy sauce (divided)

2 tbsp olive oil

Black pepper, to taste

2 tbsp orange juice (divided)

¼ cup honey

23 tbsp chili paste

1 tbsp fresh ginger, chopped

2 garlic cloves, chopped

For Serving:

34 cups cooked rice

Sliced cucumber & avocado

Kimchi

Fried wontons

Yum Yum Sauce:

⅓ cup mayo (olive oil-based works great)

2 tbsp ketchup

1 tbsp Worcestershire sauce

1 tsp seasoned salt

¼ tsp cayenne pepper (adjust to taste)


Instructions

Preheat oven to 425°F (220°C).

Toss chicken with 1 tbsp soy sauce, 1 tbsp orange juice, and black pepper. Sprinkle cornstarch (optional), drizzle with oil, and bake for 15 minutes.

Mix remaining sauce ingredients: ⅓ cup soy, 2 tbsp orange juice, honey, chili paste, garlic, and ginger.

After 15 minutes, pour ⅔ of the sauce over the chicken. Bake another 5–10 minutes until cooked. Broil 1–2 minutes for crispy edges.

Whisk together Yum Yum Sauce ingredients. Adjust to taste.
