Ingredients

  • 2 Chicken breasts
  • 4 cups Lettuce (romaine or mixed greens)
  • 1 cup Cherry tomatoes
  • 1 cup Corn (fresh, canned, or frozen)
  • 1 can Black beans (drained and rinsed)
  • 1 large Avocado (diced)
  • Optional: Tortilla strips (for crunch)
  • ½ cup Spicy ranch dressing

Instructions

  1. Marinate chicken in olive oil, lime juice, and spices for 30 minutes. Grill chicken until cooked through, about 6-8 minutes per side. Let rest before slicing.
  2. Chop lettuce and other veggies: slice cherry tomatoes, drain black beans, and dice avocado.
  3. Layer chopped lettuce in a large bowl or platter.
  4. Top with grilled chicken, cherry tomatoes, corn, black beans, and avocado.
  5. Drizzle with ranch dressing and gently toss together.
  6. Add tortilla strips on top for crunch.
