- 2 Chicken breasts
- 4 cups Lettuce (romaine or mixed greens)
- 1 cup Cherry tomatoes
- 1 cup Corn (fresh, canned, or frozen)
- 1 can Black beans (drained and rinsed)
- 1 large Avocado (diced)
- Optional: Tortilla strips (for crunch)
- ½ cup Spicy ranch dressing
Instructions
- Marinate chicken in olive oil, lime juice, and spices for 30 minutes. Grill chicken until cooked through, about 6-8 minutes per side. Let rest before slicing.
- Chop lettuce and other veggies: slice cherry tomatoes, drain black beans, and dice avocado.
- Layer chopped lettuce in a large bowl or platter.
- Top with grilled chicken, cherry tomatoes, corn, black beans, and avocado.
- Drizzle with ranch dressing and gently toss together.
- Add tortilla strips on top for crunch.
