Ingredients

- 1 lb Smoked Sausage, sliced into bite-sized pieces
- 2 medium Potatoes, diced (Yukon Gold or red)
- 1 Bell Pepper, chopped (any color)
- 1 Onion, chopped (sweet or yellow)
- 2 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
Instructions
- Prep your ingredients: Slice the smoked sausage, wash and dice the potatoes, and chop the onions and bell peppers.
- Heat the skillet: Drizzle olive oil over medium heat.
- Brown the sausage: Add the sausage to the skillet and brown for about 5-7 minutes.
- Add the onions and bell peppers: Toss them in and sauté for 3-4 minutes.
- Throw in the potatoes: Stir everything together, season with salt and pepper, and cover.
- Cook until tender: Let it simmer for 15-20 minutes.
- Finish with seasoning: Taste and adjust, adding any desired spices.
- Serve and enjoy: Spoon into bowls and garnish with herbs.
