Ingredients

  • 1 lb Smoked Sausage, sliced into bite-sized pieces
  • 2 medium Potatoes, diced (Yukon Gold or red)
  • 1 Bell Pepper, chopped (any color)
  • 1 Onion, chopped (sweet or yellow)
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prep your ingredients: Slice the smoked sausage, wash and dice the potatoes, and chop the onions and bell peppers.
  2. Heat the skillet: Drizzle olive oil over medium heat.
  3. Brown the sausage: Add the sausage to the skillet and brown for about 5-7 minutes.
  4. Add the onions and bell peppers: Toss them in and sauté for 3-4 minutes.
  5. Throw in the potatoes: Stir everything together, season with salt and pepper, and cover.
  6. Cook until tender: Let it simmer for 15-20 minutes.
  7. Finish with seasoning: Taste and adjust, adding any desired spices.
  8. Serve and enjoy: Spoon into bowls and garnish with herbs.
