Ingredients
⅔ cup all-purpose flour
⅛ tsp baking soda
¼ tsp baking powder
⅛ tsp salt
¼ cup granulated sugar
2 tbsp unsalted butter, melted
2 tbsp full-fat coconut milk (or dairy milk)
1 large egg white, room temp
2 tbsp chocolate chips
⅓ cup fresh cherries, pitted and halved
Instructions
Preheat oven to 350°F (175°C). Line or grease 3–4 muffin cups.
In a bowl, whisk flour, baking soda, baking powder, salt, and sugar.
In another bowl, whisk melted butter, coconut milk, and egg white.
Combine wet and dry ingredients just until mixed.
Fold in chocolate chips and cherries.
Divide batter among muffin cups and bake 18–22 minutes, until golden and a toothpick comes out clean.
