Ingredients

2 cups cooked brown rice

1 cucumber, thinly sliced

1 tbsp rice vinegar

1 tsp sesame oil

Salt, to taste

1 tbsp olive oil or butter (for shrimp)

Honey Soy Dressing

2 tbsp soy sauce

1 tbsp honey

1 tsp sesame oil

1 tsp lime juice

Optional: chili flakes or sriracha for heat

Instructions

Toss sliced cucumber with rice vinegar, sesame oil, and a pinch of salt. Set aside.
