This rich, savory filling is the heart of any great Shepherd’s Pie—ground meat, veggies, and herbs simmered in a flavorful gravy. Top it with creamy mashed potatoes or cauliflower mash, broil until golden, and you’ve got comfort food that hits every warm, satisfying note. Classic flavor, modern flexibility.

Ingredients

Scale

1 tbsp olive oil

1 lb ground beef or lamb

1 small onion, chopped

2 cloves garlic, minced

1 cup carrots, diced

1 cup peas or green beans

2 tbsp tomato paste

1 tbsp Worcestershire sauce (GF if needed)

1/2 cup beef broth

1 tsp fresh thyme or 1/2 tsp dried

Salt & pepper, to taste

Topping Options:

3 cups mashed potatoes or cauliflower mash

1/4 cup grated Parmesan or cheddar (optional, for broiling)

Instructions

In a skillet, heat olive oil and cook meat until browned. Add onion, garlic, and carrots; sauté until softened.

Stir in tomato paste, Worcestershire, broth, thyme, salt, and pepper. Simmer 5–7 mins until thick. Add peas last.

Transfer filling to an oven-safe dish. Spread mashed potatoes or cauliflower over the top.

Sprinkle with cheese (if using). Broil 3–5 mins until golden.

Serve hot with a side salad or crusty bread.
