Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a muffin tin by greasing it with cooking spray or oil.
- Mix the eggs in a large bowl until fully combined.
- Add the crumbled sausage to the egg mixture.
- Toss in the colorful vegetables and shredded cheese.
- Season with salt and pepper to taste.
- Pour the mixture into the muffin tin, filling each cup about ¾ full.
