Ingredients

1 small butternut or acorn squash, sliced into wedges

2 tbsp olive oil

Salt, pepper, and thyme or rosemary (for roasting)

Rosemary flatbread or crackers

6 oz goat cheese

2 tbsp cream cheese or Greek yogurt (to soften spread)

1 tbsp honey or lemon zest (optional, for added flavor)

Optional: pomegranate seeds, toasted pepitas, fig jam


Instructions

Roast squash: Toss squash wedges with olive oil, salt, pepper, and herbs. Roast at 400°F (200°C) for 25–30 minutes, flipping once, until tender and golden.

Make goat cheese spread: Blend goat cheese with cream cheese or yogurt until smooth. Stir in honey or zest for a flavor boost.

Assemble board: Arrange roasted squash, warm flatbread, and a bowl of goat cheese spread. Add optional toppings like pomegranate seeds or pepitas for extra color and texture.

Serve warm or at room temp with a drizzle of olive oil or a side of fig jam.
