Ingredients
2 cups old-fashioned oats
3 eggs
1 cup milk (dairy or unsweetened plant-based)
1/2 cup shredded cheddar or Swiss cheese
1/2 cup finely chopped veggies (like spinach, bell pepper, onion)
1/4 tsp salt + pepper to taste
Optional: crumbled turkey sausage or chopped bacon
Instructions
Preheat oven to 375°F (190°C). Grease a muffin tin or use silicone liners.
