Ingredients
3 turkey sausages, sliced
2 medium eggs
Handful of spinach
½ tomato, diced
2 low-carb street taco tortillas (whole wheat preferred)
¼ cup fat-free mozzarella cheese
Crushed red pepper, to taste
Instructions
In a nonstick skillet, cook turkey sausage slices until browned.
Add diced tomato and spinach, sauté until spinach is wilted.
Crack in eggs and scramble everything together until just cooked.
Warm tortillas and divide the egg mixture between them.
