Ingredients
2 salmon fillets
1 tbsp olive oil
Salt, pepper & paprika to taste
1 cup orzo pasta
2 cups chicken or vegetable broth
1 clove garlic, minced
Juice and zest of 1 lemon
1/4 cup grated Parmesan
1 tbsp butter
Fresh parsley for garnish
Instructions
Season salmon with salt, pepper, and paprika. In a skillet, heat olive oil and sear salmon skin-side down for 3–4 minutes. Flip and cook another 2–3 minutes. Remove and set aside.
In the same skillet, add garlic and orzo. Toast for 1 minute.
Pour in broth and bring to a simmer. Cook for 8–10 minutes, stirring occasionally.
Stir in lemon juice, zest, Parmesan, and butter. Return salmon on top, cover, and let sit for 2 minutes.
Garnish with parsley and serve warm.
