- 2 cups rotisserie chicken, shredded
- 8 ounces pasta (e.g., penne or rotini)
- 2 cups broccoli florets
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Optional: Red pepper flakes for garnish
Instructions
- Boil the pasta. Bring a large pot of salted water to a boil, add pasta, and cook until al dente. Drain and set aside, reserving some pasta water.
- Sauté the broccoli. In a skillet, heat olive oil over medium heat, add broccoli, and sauté for 3-4 minutes until tender.
- Add the garlic. Toss in minced garlic and sauté for an additional minute until fragrant.
- Create the cream sauce. Reduce heat, pour in heavy cream, and stir. Let it simmer for 2-3 minutes.
- Bring pasta and chicken into the mix. Add drained pasta and shredded chicken; mix gently to coat.
- Add cheese. Sprinkle Parmesan cheese and stir until melted and gooey; season to taste.
- Serve hot. Plate the dish and garnish with red pepper flakes if desired.
Notes
For a lighter version, substitute half-and-half or non-dairy milk for heavy cream. You can also add more veggies or switch the protein to shrimp or tofu for variations.
