1 can kidney beans (drained & rinsed)

1 can garbanzo beans (chickpeas, drained & rinsed)

1 can cannellini beans (or great northern beans, drained & rinsed)

1/2 cup red onion, finely chopped

1/2 cup celery, chopped

1/4 cup fresh parsley, chopped
For the dressing:

1/4 cup apple cider vinegar

2 tbsp olive oil

1 tbsp sugar or honey

Salt & pepper to taste
Instructions

In a large bowl, combine the three beans, chopped onion, celery, and parsley.

In a small bowl, whisk together the vinegar, olive oil, sugar, salt, and pepper.

Pour the dressing over the bean mixture and toss gently to combine.

Refrigerate for at least 1 hour before serving for best flavor.
