Ingredients

  • 1 can kidney beans (drained & rinsed)

  • 1 can garbanzo beans (chickpeas, drained & rinsed)

  • 1 can cannellini beans (or great northern beans, drained & rinsed)

  • 1/2 cup red onion, finely chopped

  • 1/2 cup celery, chopped

  • 1/4 cup fresh parsley, chopped

For the dressing:

  • 1/4 cup apple cider vinegar

  • 2 tbsp olive oil

  • 1 tbsp sugar or honey

  • Salt & pepper to taste


Instructions

  • In a large bowl, combine the three beans, chopped onion, celery, and parsley.

  • In a small bowl, whisk together the vinegar, olive oil, sugar, salt, and pepper.

  • Pour the dressing over the bean mixture and toss gently to combine.

  • Refrigerate for at least 1 hour before serving for best flavor.
