4 lbs potatoes, chopped
⅔ cup parmesan, grated
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
½ tsp oregano
1 tsp salt, divided
6 tbsp olive oil, divided
½ tsp black pepper
2 large broccoli heads, cut into florets
Chicken
2 lbs chicken breast, skinless and boneless
2 tsp dried oregano
2 tsp dried parsley
1 tsp dried basil
1 tsp garlic powder
½ tsp onion powder
½ tsp salt
¼ tsp black pepper
Sauce
1 cup ranch dressing
Instructions
Preheat oven to 425°F (220°C).
Toss chopped potatoes with half the olive oil, parmesan, and seasonings. Spread on a baking tray and roast for 35–40 minutes, flipping halfway.
Season chicken with herbs, garlic, onion powder, salt, and pepper. Heat a skillet with remaining olive oil and cook chicken 6–8 minutes per side, until golden and cooked through.
Toss broccoli in oil, season with salt and pepper, and roast for 20–25 minutes or steam lightly.
Divide potatoes, chicken, and broccoli into 6–8 meal prep containers. Drizzle or serve with ranch dressing.
