Description

A comforting one-pot meal that combines the classic flavors of chicken pot pie with pasta for a quick and hearty dinner.


Ingredients

  • Pasta (Fusilli or Penne)
  • Cooked Chicken (Shredded or Cubed)
  • Onion (Diced)
  • Carrots (Diced)
  • Frozen Peas
  • Garlic (Minced)
  • Cream or Cream Cheese
  • Chicken Broth
  • Dried Thyme
  • Dried Rosemary
  • Salt and Pepper

Instructions

  1. Cook the Pasta by boiling salted water, adding pasta, and cooking until al dente. Drain and set aside.
  2. Sauté the Veggies in a skillet with olive oil; add onion, cooking until softened. Add carrots and garlic, sautéing until fragrant.
  3. Combine the Chicken with the veggies, stirring until well mixed.
  4. Make the Sauce by adding chicken broth and simmering, then stirring in cream, thyme, rosemary, salt, and pepper.
  5. Add the Pasta and Peas, folding them into the sauce and warming through.
  6. Adjust Seasoning to taste before serving.
  7. Serve hot, garnished with parsley or chives and optionally with bread.
