- 2 tablespoons of butter or extra-virgin olive oil (divided)
- 1½ pounds of Polish-style smoked sausage, cut into ½-inch thick rounds
- Freshly cracked black pepper (to taste)
- ½ teaspoon of smoked paprika (optional)
- Sea salt (to taste)
- 2 pounds of Russet or Yukon Gold potatoes, peeled and cubed into ½-inch pieces
- 1 teaspoon of garlic powder
- Chopped fresh parsley (for garnish, optional)
Instructions
- Heat the pan by heating a large skillet over medium heat. Add one tablespoon of butter or olive oil, letting it melt.
- Sauté the sliced onions in the hot pan for about 5-7 minutes until golden and caramelized.
- Add the smoked sausage rounds and cook for about 5 minutes until browned.
- Incorporate the cubed potatoes, remaining butter or olive oil, garlic powder, smoked paprika (if using), and sea salt. Stir for about 2 minutes.
- Cook on low heat, covered, for about 25-30 minutes, stirring occasionally, until the potatoes are tender.
- Final seasoning with salt and black pepper to taste. Garnish with chopped parsley before serving.
