  • 4 cups powdered sugar
  • 1/4 cup fresh raspberries (pureed)
  • 2 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare two 9-inch round cake pans by greasing and flouring them.
  3. Mix together the flour, baking powder, baking soda, and salt in a bowl.
  4. Beat the softened butter and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each, followed by the vanilla extract.
  6. Incorporate the ground pistachios into the mixture.
  7. Combine the flour mixture with the wet ingredients, alternately adding the milk.
  8. Divide the batter between the prepared cake pans and bake for 25-30 minutes.
  9. Cool the cakes in the pans for 10 minutes before transferring to a wire rack.
  10. Make the buttercream by beating the softened butter and gradually adding powdered sugar, raspberry puree, and heavy cream.
  11. Assemble the cake by layering raspberry jam and buttercream between the cake layers.
  12. Frost the top and sides of the cake with the remaining buttercream.
  13. Garnish with fresh raspberries and chopped pistachios.
