- 1 cup pineapple chunks (fresh or canned)
- 1–2 bell peppers (any color, cut into pieces)
- 2 tablespoons olive oil
- 3 tablespoons soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- Salt and pepper, to taste
- Skewers (wooden or metal)
Instructions
- Marinate the chicken: In a large bowl, combine the olive oil, soy sauce, honey, minced garlic, salt, and pepper. Whisk until smooth. Add the cubed chicken breast and mix well to coat all the pieces. Cover and let it marinate for at least 30 minutes.
- Prep the veggies and pineapple: Wash and cut bell peppers into bite-sized pieces, and if using fresh pineapple, cut it into chunks.
- Skewering madness: Thread the chicken, bell peppers, and pineapple onto skewers, alternating for a balanced look.
- Grill time: Preheat your grill to medium-high heat. Grill the kabobs for about 10-15 minutes, turning occasionally until the chicken is cooked through.
- Finish and serve: Let the kabobs rest for a few minutes before serving hot, optionally drizzled with leftover marinade.
Notes
