Description

A tropical twist on a comfort classic that combines succulent chicken breast with juicy pineapple chunks, earthy rice, and a hint of soy sauce.

Ingredients

Scale
  • 1 pound chicken breast, diced
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 bell pepper, diced (optional)
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Prep Your Ingredients: Dice your chicken breast, pineapple, and bell pepper (if using).
  2. Heat the Olive Oil: In a large skillet over medium heat, add one tablespoon of olive oil.
  3. Cook the Chicken: Toss in the diced chicken breast and season with salt and pepper. Sauté for about 5-7 minutes until golden brown.
  4. Add the Veggies: Once the chicken is cooked, add the diced bell peppers and sauté for an additional 3-4 minutes.
  5. Toss in the Rice: Stir in one cup of rice and let it toast for about a minute.
  6. Pour in the Broth: Gradually add 2 cups of chicken broth and the tablespoon of soy sauce. Bring to a boil, then reduce heat to low and cover. Let it simmer for about 15-20 minutes.
  7. Add Pineapple Chunks: Gently fold the pineapple chunks into the rice mixture near the end of cooking time.
  8. Check for Doneness: Once the rice is cooked, check for consistency and season to taste.
  9. Serve It Up: Take it off the heat and enjoy your Pineapple Chicken and Rice!
