- 1 cup pineapple chunks (fresh or canned)
- 1 cup rice (white or brown)
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 bell pepper, diced (optional)
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Prep Your Ingredients: Dice your chicken breast, pineapple, and bell pepper (if using).
- Heat the Olive Oil: In a large skillet over medium heat, add one tablespoon of olive oil.
- Cook the Chicken: Toss in the diced chicken breast and season with salt and pepper. Sauté for about 5-7 minutes until golden brown.
- Add the Veggies: Once the chicken is cooked, add the diced bell peppers and sauté for an additional 3-4 minutes.
