A comforting and nostalgic creamy chicken casserole, easy to prepare and perfect for family dinners.
Ingredients

- 2 cups cooked chicken, shredded
- 2 cups broccoli florets
- 1 cup cooked rice
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup crunchy topping (seasoned breadcrumbs or crushed crackers)
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- If cooking raw chicken, boil or bake until fully cooked, then shred.
- Blanch broccoli florets in boiling water for 2 minutes, drain and set aside.
- In a large bowl, mix cream of chicken soup, sour cream, shredded chicken, cooked rice, and broccoli. Season with salt and pepper, and stir to combine.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Sprinkle shredded cheddar cheese on top.
- Add crunchy topping evenly over cheese.
- Cover with foil and bake for 25 minutes, then remove foil and bake for another 10-15 minutes until bubbly and golden brown.
- Let sit for 5 minutes before serving.
Notes
For a vegetarian version, substitute chicken with shredded tofu or chickpeas. Can be frozen for later enjoyment.
