Description

A comforting and nostalgic creamy chicken casserole, easy to prepare and perfect for family dinners.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups broccoli florets
  • 1 cup cooked rice
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup crunchy topping (seasoned breadcrumbs or crushed crackers)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. If cooking raw chicken, boil or bake until fully cooked, then shred.
  3. Blanch broccoli florets in boiling water for 2 minutes, drain and set aside.
  4. In a large bowl, mix cream of chicken soup, sour cream, shredded chicken, cooked rice, and broccoli. Season with salt and pepper, and stir to combine.
  5. Transfer the mixture to a greased 9×13 inch baking dish.
  6. Sprinkle shredded cheddar cheese on top.
  7. Add crunchy topping evenly over cheese.
  8. Cover with foil and bake for 25 minutes, then remove foil and bake for another 10-15 minutes until bubbly and golden brown.
  9. Let sit for 5 minutes before serving.

Notes

For a vegetarian version, substitute chicken with shredded tofu or chickpeas. Can be frozen for later enjoyment.
