Description

A delightful twist on classic stuffed peppers, this pasta dish features vibrant peppers filled with a cheesy mixture served on a bed of pasta.


Ingredients

  • 4 large Bell Peppers (red, yellow, or green)
  • 12 oz Pasta (penne or rotini)
  • 1 lb Ground Beef or Turkey
  • 1 cup Rice (cooked)
  • 2 cups Tomato Sauce
  • 8 oz Cream Cheese
  • 2 cups Cheddar Cheese (shredded)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt & Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente, reserving about a cup of pasta water before draining.
  3. Slice the tops off the bell peppers and remove the seeds.
  4. In a large skillet, brown the ground meat over medium heat, then stir in cooked rice, tomato sauce, and spices. Mix in the cream cheese until melted.
  5. Stuff the bell peppers generously with the filling mixture.
  6. Toss the drained pasta with the remaining filling, adding reserved pasta water if necessary.
  7. In a baking dish, place the stuffed peppers upright and spoon the pasta mixture around them.
  8. Sprinkle shredded cheddar cheese over the peppers and pasta.
  9. Bake covered with foil for 25 minutes, then remove foil and bake for an additional 10 minutes until golden.
  10. Garnish with fresh herbs and serve.
