A delightful twist on classic stuffed peppers, this pasta dish features vibrant peppers filled with a cheesy mixture served on a bed of pasta.

- 4 large Bell Peppers (red, yellow, or green)
- 12 oz Pasta (penne or rotini)
- 1 lb Ground Beef or Turkey
- 1 cup Rice (cooked)
- 2 cups Tomato Sauce
- 8 oz Cream Cheese
- 2 cups Cheddar Cheese (shredded)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- Salt & Pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the pasta according to package instructions until al dente, reserving about a cup of pasta water before draining.
- Slice the tops off the bell peppers and remove the seeds.
- In a large skillet, brown the ground meat over medium heat, then stir in cooked rice, tomato sauce, and spices. Mix in the cream cheese until melted.
- Stuff the bell peppers generously with the filling mixture.
- Toss the drained pasta with the remaining filling, adding reserved pasta water if necessary.
- In a baking dish, place the stuffed peppers upright and spoon the pasta mixture around them.
- Sprinkle shredded cheddar cheese over the peppers and pasta.
- Bake covered with foil for 25 minutes, then remove foil and bake for an additional 10 minutes until golden.
- Garnish with fresh herbs and serve.

Feel free to customize with different spices or cheese variations. You can prepare ahead of time and bake when ready.
