  • 4 Cups Romaine Lettuce, chopped
  • 1 Avocado, diced
  • 2 Hard-Boiled Eggs
  • 1 Cup Cherry Tomatoes, halved

  • ¼ Cup Blue Cheese (optional), crumbled
  • ¼ Cup Olive Oil
  • 2 Tablespoons Apple Cider Vinegar

Instructions

  1. Grill the Chicken: Preheat your grill or grill pan over medium heat. Season your chicken breasts with salt, pepper, and any desired spices. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F. Let it rest for 5 minutes before slicing.
  2. Prepare the Eggs: Place them in a saucepan and cover with cold water. Bring it to a rolling boil, then turn off the heat and cover for about 10-12 minutes. Transfer to an ice bath to stop the cooking process.
  3. Chop the Lettuce: Wash and chop your romaine lettuce and place it in a large salad bowl.
  4. Dice the Avocado: Cut the avocado in half, remove the pit, and scoop the flesh out. Dice it into bite-sized pieces.
  5. Slice the Eggs: Peel the eggs and slice them into rounds. Place them on top of your salad.
