- 1 lb cooked chicken, shredded
- 12 oz rotini or penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup BBQ sauce
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 tbsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- 1/2 cup diced red onion
- Chopped green onions for garnish (optional)
Instructions
- Sauté the aromatics by heating a large pot over medium heat. Toss in diced red onion and cook until soft (about 4-5 minutes). Add garlic powder for fragrance.
- Add the shredded chicken and stir to combine with onions, seasoning with salt and pepper.
- Mix in chicken broth and heavy cream, then add BBQ sauce and ranch dressing, creating a creamy sauce.
- Bring the mixture to a gentle boil, then stir in the pasta.
- Cook the pasta for 10-12 minutes on simmer until al dente, stirring occasionally.
- Remove from heat and fold in shredded cheddar cheese until melted.
- Season to taste and garnish with green onions before serving.
Notes
Serve with garlic bread or a side salad. Store leftovers in an airtight container for up to 3 days.
