A simple and flavorful one-pan dish featuring kielbasa, vibrant vegetables, and a sweet honey garlic glaze, perfect for busy weeknights.


Ingredients

  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic (minced)
  • 2 tablespoons Soy Sauce
  • 1 each Bell Pepper (red & yellow)
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Chop the bell peppers, baby carrots, and halved baby potatoes into uniform bite-sized pieces.
  3. Prepare the sauce by whisking together honey, minced garlic, and soy sauce in a small bowl.
  4. Toss kielbasa, chopped veggies, and olive oil in a large bowl, then pour the honey garlic sauce over and coat everything well.
  5. Spread the mixture onto a baking sheet in an even layer.
  6. Bake for about 25-30 minutes until the kielbasa is heated through and crispy, and the veggies are fork-tender.
  7. Garnish with fresh parsley or green onions before serving.

Notes

Feel free to substitute kielbasa with any smoked sausage or chicken sausages. Experiment with different vegetables for variety.
