- 1 pound Kielbasa
- 2 tablespoons Honey
- 3 cloves Garlic (minced)
- 2 tablespoons Soy Sauce
- 1 each Bell Pepper (red & yellow)
- 1 cup Baby Carrots
- 1 pound Baby Potatoes
- 2 tablespoons Olive Oil
- 2 tablespoons Fresh Parsley or Green Onions
Instructions
- Preheat the oven to 400°F (200°C).
- Chop the bell peppers, baby carrots, and halved baby potatoes into uniform bite-sized pieces.
- Prepare the sauce by whisking together honey, minced garlic, and soy sauce in a small bowl.
- Toss kielbasa, chopped veggies, and olive oil in a large bowl, then pour the honey garlic sauce over and coat everything well.
- Spread the mixture onto a baking sheet in an even layer.
- Bake for about 25-30 minutes until the kielbasa is heated through and crispy, and the veggies are fork-tender.
- Garnish with fresh parsley or green onions before serving.
Notes
Feel free to substitute kielbasa with any smoked sausage or chicken sausages. Experiment with different vegetables for variety.
