One-Pan Balsamic Chicken

Description

A simple and flavorful one-pan recipe featuring marinated chicken breasts with balsamic vinegar, garlic, and fresh vegetables.


Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes
  • 1 cup spinach

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together the balsamic vinegar, olive oil, honey, minced garlic, oregano, salt, and pepper in a medium bowl.
  3. Marinate the chicken in a large zip-top bag with the marinade for at least 30 minutes.
  4. Heat a large oven-safe skillet over medium-high heat, add olive oil, and sear the marinated chicken for 4-5 minutes on each side.
  5. Add cherry tomatoes around the chicken in the pan and drizzle with any leftover marinade.
  6. Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches 165°F (75°C).
  7. Add spinach to the pan with 5 minutes left to cook.
  8. Serve the dish directly from the skillet.

Notes

For added flavor, garnish with fresh herbs or serve with mashed potatoes, rice, or a salad.
