A simple and flavorful one-pan recipe featuring marinated chicken breasts with balsamic vinegar, garlic, and fresh vegetables.

- 4 chicken breasts, boneless and skinless
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon honey
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1 cup cherry tomatoes
- 1 cup spinach
Instructions
- Preheat the oven to 400°F (200°C).
- Whisk together the balsamic vinegar, olive oil, honey, minced garlic, oregano, salt, and pepper in a medium bowl.
- Marinate the chicken in a large zip-top bag with the marinade for at least 30 minutes.
- Heat a large oven-safe skillet over medium-high heat, add olive oil, and sear the marinated chicken for 4-5 minutes on each side.
- Add cherry tomatoes around the chicken in the pan and drizzle with any leftover marinade.
- Transfer the skillet to the oven and bake for 20-25 minutes until the chicken reaches 165°F (75°C).
- Add spinach to the pan with 5 minutes left to cook.
- Serve the dish directly from the skillet.
Notes
For added flavor, garnish with fresh herbs or serve with mashed potatoes, rice, or a salad.
