Ingredients
1 box (11 oz) vanilla wafers
1 can (14 oz) sweetened condensed milk
2 cups chopped pecans (plus extra for topping)
Instructions
Crush the vanilla wafers into fine crumbs (a food processor works great).
In a large bowl, mix the crumbs with condensed milk until fully combined.
Stir in chopped pecans.
Shape mixture into a log using wax paper or plastic wrap.
Roll in additional pecans if desired for a pretty finish.
Wrap tightly and chill for several hours or overnight.
Slice and serve cold or at room temp.
