Ingredients
3 cups all-purpose flour
1 tbsp ground cinnamon
1 tsp salt
1 tsp baking soda
¼ tsp baking powder
2 cups white sugar
2 cups peeled, shredded pears (about 2–3 ripe pears)
1 cup chopped pecans
3 large eggs
¾ cup vegetable oil
2 tsp vanilla extract
Instructions
Prep Oven & Pans
Preheat oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans.
Mix Dry Ingredients
In a large bowl, whisk flour, cinnamon, salt, baking soda, and baking powder.
Combine Wet Ingredients
In another bowl, beat eggs with sugar, oil, and vanilla. Stir in shredded pears and pecans.
Bring it Together
Gradually add the dry ingredients to the wet, stirring just until blended.
Bake
Divide batter evenly between the two pans.
Bake for 55–65 minutes or until a toothpick inserted in the center comes out clean.
Cool in pans for 10 minutes, then transfer to a wire rack.
