Ingredients
2 tbsp vegetable oil
¾ lb skinless, boneless chicken breast, cubed
½ (1.25 oz) packet taco seasoning mix
1 (15 oz) can black beans, rinsed and drained
1 (8.75 oz) can sweet corn, drained
¼ cup salsa
Water as needed
1 cup shredded Mexican-style cheese
1½ cups crushed plain tortilla chips
Instructions
Preheat oven to 350°F (175°C).
In a skillet, heat oil over medium heat. Add chicken and cook until no longer pink.
Stir in taco seasoning and a splash of water; cook until chicken is coated and sauce thickens.
In a bowl, mix beans, corn, salsa, and cooked chicken.
In a greased baking dish, layer half the tortilla chips, the chicken mixture, then top with cheese. Repeat layers.
Bake for 20–25 minutes, until hot and bubbly.
Let sit for 5 minutes before serving. Garnish with cilantro or sour cream if desired.
