- 2 pounds Chicken Breast (or Thighs), cut into bite-sized pieces
- 1/4 cup Olive Oil
- 1/4 cup Cilantro, chopped
- Juice of 2 Limes
- 2 teaspoons Garlic Powder
- 1 tablespoon Chili Powder
- 1 teaspoon Cumin
- Salt and Pepper, to taste
- 1 cup Bell Peppers, cut into chunks
- 1 cup Red Onion, cut into chunks
- 1/2 cup Barbecue Sauce, for brushing
Instructions
- Marinate the chicken: In a large bowl, combine olive oil, lime juice, chopped cilantro, garlic powder, chili powder, cumin, salt, and pepper to create a delicious marinade. Whisk until well blended. Add the chicken pieces to the marinade, coating evenly. Cover and refrigerate for at least 30 minutes.
- Soak wooden skewers in water for about 30 minutes to prevent burning. Thread the chicken pieces onto the skewers, alternating with chunks of bell peppers and red onion.
- Preheat the grill to medium-high heat and apply olive oil to the grill grates to prevent sticking.
- Grill the skewers for about 4-5 minutes on each side, basting with barbecue sauce during the last few minutes. Ensure chicken reaches internal temperature of 165°F.
- Rest the skewers for about 5 minutes before serving.
Notes
For a spicier twist, add jalapeño slices to the skewers. Consider using a mix of colorful vegetables for a more vibrant presentation.
