Description

Delicious quesadillas filled with gooey mozzarella, tangy feta, fresh spinach, and sweet red onion, perfect for a quick meal or a fun gathering.


Ingredients

  • 4 Flour Tortillas
  • 2 cups Fresh Spinach
  • 1/2 cup Feta Cheese, crumbled
  • 1 cup Mozzarella Cheese, shredded
  • 1 Red Onion, thinly sliced
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Wash and pat dry the spinach, then chop roughly.
  2. Slice the red onion thinly.
  3. In a bowl, combine the crumbled feta and shredded mozzarella.
  4. Heat olive oil in a skillet over medium heat, add red onion, and sauté until soft (3-4 minutes).
  5. Add spinach and stir until wilted (1-2 minutes).
  6. Season with salt and pepper. Add cheese mixture and stir until combined.
  7. Place a tortilla in another skillet, add cheesy filling on one half, and fold the other half over.
  8. Cook for 3-4 minutes per side until golden brown and crispy.
  9. Transfer to a cutting board, let cool slightly, and slice into triangles.

Notes

Serve with tzatziki or Greek yogurt dip. For extra freshness, add chopped parsley or dill on top.
