- 4 Flour Tortillas
- 2 cups Fresh Spinach
- 1/2 cup Feta Cheese, crumbled
- 1 cup Mozzarella Cheese, shredded
- 1 Red Onion, thinly sliced
- 2 tablespoons Olive Oil
- Salt, to taste
- Pepper, to taste
Instructions
- Wash and pat dry the spinach, then chop roughly.
- Slice the red onion thinly.
- In a bowl, combine the crumbled feta and shredded mozzarella.
- Heat olive oil in a skillet over medium heat, add red onion, and sauté until soft (3-4 minutes).
- Add spinach and stir until wilted (1-2 minutes).
- Season with salt and pepper. Add cheese mixture and stir until combined.
- Place a tortilla in another skillet, add cheesy filling on one half, and fold the other half over.
- Cook for 3-4 minutes per side until golden brown and crispy.
- Transfer to a cutting board, let cool slightly, and slice into triangles.
Notes
Serve with tzatziki or Greek yogurt dip. For extra freshness, add chopped parsley or dill on top.
