Ingredients

  • 1 cup Cherry Tomatoes, halved
  • 1/2 cup Olives, sliced (Kalamata or green)
  • 1 small Red Onion, diced
  • 1/4 cup Fresh Parsley, chopped
  • 1/4 cup Fresh Basil, chopped
  • 3 tablespoons Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • Salt and Pepper to taste

Instructions

  1. Cook the Potatoes: Wash and chop them into bite-sized pieces, then boil in salted water for 10-15 minutes until fork-tender.
  2. Assemble the Ingredients: In a large bowl, combine cherry tomatoes, olives, red onion, parsley, and basil.
