- 2 lbs Potatoes (preferably Yukon Gold or Red Bliss)
- 1 cup Cherry Tomatoes, halved
- 1/2 cup Olives, sliced (Kalamata or green)
- 1 small Red Onion, diced
- 1/4 cup Fresh Parsley, chopped
- 1/4 cup Fresh Basil, chopped
- 3 tablespoons Olive Oil
- 2 tablespoons Red Wine Vinegar
- Salt and Pepper to taste
Instructions
- Cook the Potatoes: Wash and chop them into bite-sized pieces, then boil in salted water for 10-15 minutes until fork-tender.
- Assemble the Ingredients: In a large bowl, combine cherry tomatoes, olives, red onion, parsley, and basil.
