- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 teaspoon oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Prepare your ingredients by slicing the chicken, bell peppers, zucchini, and halving the cherry tomatoes.
- Heat a large skillet over medium-high heat and warm the olive oil.
- Add the sliced chicken to the skillet, season it with salt and pepper, and sauté for about 5-7 minutes.
- Push the chicken to one side of the pan and sauté the garlic for about 30 seconds.
- Add the bell peppers and zucchini, cooking for another 3-4 minutes.
- Toss in the cherry tomatoes and sprinkle the oregano, simmering for another 2-3 minutes.
- Final taste adjustments and garnish with fresh parsley before serving.
