  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare your ingredients by slicing the chicken, bell peppers, zucchini, and halving the cherry tomatoes.
  2. Heat a large skillet over medium-high heat and warm the olive oil.
  3. Add the sliced chicken to the skillet, season it with salt and pepper, and sauté for about 5-7 minutes.
  4. Push the chicken to one side of the pan and sauté the garlic for about 30 seconds.
  5. Add the bell peppers and zucchini, cooking for another 3-4 minutes.
  6. Toss in the cherry tomatoes and sprinkle the oregano, simmering for another 2-3 minutes.
  7. Final taste adjustments and garnish with fresh parsley before serving.
