Ingredients

- 2 lbs Yukon Gold or red potatoes
- 1 packet ranch seasoning
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 6 strips bacon, cooked and crumbled
- 1/2 cup green onions, sliced
- Salt and pepper, to taste
Instructions
- Prep your potatoes by washing them thoroughly.
- Boil the potatoes in salted water for 10-15 minutes until fork-tender.
- Drain the potatoes and let them cool for about 10 minutes.
- Mix the mayonnaise, sour cream, and ranch seasoning in a large bowl.
- Combine the cooled potatoes with the ranch mixture, folding gently.
- Add the crispy bacon, cheddar cheese, and green onions to the salad.
- Season with salt and pepper to taste.
- Chill the salad in the fridge for at least 30 minutes before serving.
- Serve garnished with extra cheese, bacon bits, and green onions.
Notes
For a lighter version, substitute Greek yogurt for mayonnaise. Customize with different cheeses and herbs to suit your taste.
