Description

Ingredients

  • 2 lbs Yukon Gold or red potatoes
  • 1 packet ranch seasoning
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 6 strips bacon, cooked and crumbled
  • 1/2 cup green onions, sliced
  • Salt and pepper, to taste

Instructions

  1. Prep your potatoes by washing them thoroughly.
  2. Boil the potatoes in salted water for 10-15 minutes until fork-tender.
  3. Drain the potatoes and let them cool for about 10 minutes.
  4. Mix the mayonnaise, sour cream, and ranch seasoning in a large bowl.
  5. Combine the cooled potatoes with the ranch mixture, folding gently.
  6. Add the crispy bacon, cheddar cheese, and green onions to the salad.
  7. Season with salt and pepper to taste.
  8. Chill the salad in the fridge for at least 30 minutes before serving.
  9. Serve garnished with extra cheese, bacon bits, and green onions.

Notes

For a lighter version, substitute Greek yogurt for mayonnaise. Customize with different cheeses and herbs to suit your taste.
