- 1 pound ground beef or turkey (93/7 lean recommended)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 small red onion (chopped)
- 15 ounces black beans (1 can, drained and rinsed)
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup shredded cheddar cheese
- 1 cup cherry tomatoes (halved)
- 1 medium avocado (diced)
- 1/4 cup fresh cilantro (loosely packed and chopped)
- Lime wedges (for serving)
- Sour cream (for topping)
Instructions
- Preheat your oven to 425°F (220°C).
- Toss diced potatoes in olive oil and season with garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Spread the seasoned potatoes on a baking sheet lined with parchment paper and bake for 25-30 minutes, flipping halfway through.
- Heat a skillet over medium-high heat and add chopped onions, cooking until soft (about 3-4 minutes).
- Add ground beef or turkey, breaking it up as it browns, and cook until no longer pink (about 5-7 minutes).
- Stir in chili powder, cumin, and a pinch of salt, cooking for a couple of minutes to meld flavors.
- Add black beans and corn to the meat mixture, heating through for about 3-4 minutes.
- In a serving dish, layer crispy roasted potatoes and the meat-bean mixture, then add toppings: cheese, cherry tomatoes, avocado, cilantro, and sour cream.
- Squeeze lime over the top and serve hot with additional lime wedges.
