Description

  • 4 medium russet potatoes (peeled and diced into 3/4-inch pieces)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper (to taste)
  • 1 pound ground beef or turkey (93/7 lean recommended)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 small red onion (chopped)
  • 15 ounces black beans (1 can, drained and rinsed)
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup shredded cheddar cheese
  • 1 cup cherry tomatoes (halved)
  • 1 medium avocado (diced)
  • 1/4 cup fresh cilantro (loosely packed and chopped)
  • Lime wedges (for serving)
  • Sour cream (for topping)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss diced potatoes in olive oil and season with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  3. Spread the seasoned potatoes on a baking sheet lined with parchment paper and bake for 25-30 minutes, flipping halfway through.
  4. Heat a skillet over medium-high heat and add chopped onions, cooking until soft (about 3-4 minutes).
  5. Add ground beef or turkey, breaking it up as it browns, and cook until no longer pink (about 5-7 minutes).
  6. Stir in chili powder, cumin, and a pinch of salt, cooking for a couple of minutes to meld flavors.
  7. Add black beans and corn to the meat mixture, heating through for about 3-4 minutes.
  8. In a serving dish, layer crispy roasted potatoes and the meat-bean mixture, then add toppings: cheese, cherry tomatoes, avocado, cilantro, and sour cream.
  9. Squeeze lime over the top and serve hot with additional lime wedges.
