  • 4 medium Russet or Yukon Gold Potatoes
  • 2 tablespoons Olive Oil or Avocado Oil
  • 1 tablespoon Chili Powder

  • 1 teaspoon Garlic Powder

  • Salt & Pepper to taste
  • 1 pound Ground Beef or Black Beans
  • 1 packet Taco Seasoning
  • 1 cup Shredded Cheddar or Mexican Blend Cheese
  • 1/2 cup Sour Cream or Greek Yogurt
  • 1 cup Salsa
  • 1/4 cup Sliced Green Onions
  • 1/4 cup Chopped Cilantro

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the potatoes into bite-sized cubes.
  3. Toss the cubed potatoes with olive oil and spices until coated.
  4. Spread the seasoned potatoes on a lined baking sheet.
  5. Bake for about 25-30 minutes, tossing halfway through.
  6. Brown the ground beef or heat black beans in a skillet with olive oil and taco seasoning.
  7. Mix everything well and keep it warm.
  8. Build your bowls with crispy potatoes, and layer with beef or beans.
  9. Sprinkle shredded cheese on top and broil for extra meltiness if desired.
  10. Add your favorite toppings: sour cream, salsa, green onions, and cilantro.
