Ingredients

1/4 cup nut butter (cashew or almond works great)

1 cup pitted dates

1 tbsp chia seeds

2 tbsp fresh lemon juice

Zest of 1 lemon


Instructions

Blend oats, dates, and nut butter in a food processor until sticky and smooth.

Add chia seeds, lemon juice, and lemon zest. Pulse until combined.

Roll into small balls and chill for 20 minutes to firm.
