1 clove garlic, minced (optional)
1 teaspoon honey or maple syrup (optional, for balance)
Salt & pepper to taste
Instructions
In a jar or bowl, whisk together lemon juice, mustard, garlic, and honey.
Slowly drizzle in olive oil while whisking to emulsify.
Season with salt and pepper.
Shake or stir before each use. Keeps in the fridge for up to a week.
